What a way to start a day!:
Imagine...the best sleep you've had in a long time followed by a nice refreshing shower. How can you top that? Well..what is that smell? The mouthwatering aroma as you descend down the stairs and the freshly baked scones, bread, muffins or any other of mom's tantalizing pastries are just out of the oven and set on the table. These are buddied up by all the many homemade preserves awaiting you, accompanied by the terrific fruit platter. BUT WAIT...don't get too full....because, after all that, here comes breakfast! Coffee's Ready! Enjoy!

'Brides Breakfast':
'Brides Breakfast' 2 eggs (poached the way you like) on a bed of steamed swiss chard, topped with delicious creamy Hollandaise sauce. Nothing goes better with this than mom's fabulous, can't get enough of, home style fried potatoes, and a couple slices of grilled ham, garnished with a fresh Romaine lettuce leaf and slice of red tomato.

Mom’s Homemade Bread Recipe
This is, by far, the most requested recipe. This can be done start to finish in a bread machine, or you can let the machine do most of the work and then transfer to pans and bake. There are also a couple of options you may want to try, (I urge you to, you won’t be disappointed!) but you must transfer to pans and bake for these scrumptious breads to succeed. Measure into bread machine: 1 1/3 cup warm milk 1 egg 2 tablespoons oil Mix together and add: 1 cup whole wheat flour 2 cups unbleached flour 1/3 cup bran 1 tablespoon ground flax 1 tablespoon chi seed 1 tablespoon sugar 1 tablespoon salt 1 ½ teaspoons yeast Option #1. After the second mix add 3 tablespoons sunflower seeds Option #2. Remove from machine and add: 1 chopped jalapeno pepper 1 cup cubed cheddar cheese Return to pans. Let rise. Pre heat oven to 400, Bake at 400 for 10 minutes, Lower heat to 350, Bake at 350 for 25 minutes. Remove from oven and as soon as they cool enough remove from the pans, let cool on racks.

So now you can make Mom’s Homemade Bread, her Sunflower Seed Bread, and her Jalapeno Cheese Bread! Enjoy!

Pancakes from Scratch!
Preheat griddle 375

Stir together 1 cup unbleached flour 1 cup whole wheat flour

Or 1 cup rye flour (can substitute for any gluten free flour) ½ cup buckwheat flour ½ cup soya Add 1 Tablespoon bran 1 teaspoon ground flax seed 1 teaspoon chi seed 1 teaspoon salt 1 Tablespoon baking powder 1 teaspoon baking soda

Beat together 4 eggs 2 cups buttermilk 2 Tablespoons melted butter Add dry ingredients *may have to add a bit more milk depending on the flour you use

Must try! Our famous toppings are sour cream and homemade strawberry jam. You really have to try it; even if it doesn’t sound that good to you, try it. More people have gotten hooked on this stuff then I can count.

And then there is always the fabulous Canadian Maple Syrup.

Have you ever mixed a soft boiled egg with a little butter and had that over a nice fresh, homemade pancake? It’s delicious!! Try one of each and you won’t be needing lunch! Enjoy!!

Corn Fritters:
Corn Fritters Not a fan of corn fritters? Neither was I until I had moms! Now I am glad when the guests gobble them all up and save me from myself! Mix together 2/3 cup flour 1 teaspoon baking powder ½ teaspoon salt Beat until stiff 2 egg whites Beat 2 egg yolks ¼ cup milk ¼ cup melted butter Add dry ingredients ¼ cup chopped green onion 2-3 ears of shucked corn (decobbed) Then fold in beaten egg whites. To cook – drop by large cooking spoonful into about 1 inch of hot oil in a large frying pan. Cook until golden brown or so and flip over.

Very hot!! Let stand on paper towel for a couple minutes to cool before eating. Worth the wait!
